Mousseline Potatoes with Salmon and Lemon Sauce

Ingredients

  • 500 g Potato Guru baby potatoes
  • 100 ml heavy cream
  • 30 g butter
  • 1 fillet of salmon
  • ½ cup lemon juice
  • 1 tbsp oil
  • Salt, pepper, dill

Preparation

  1. Microwave the potatoes for 8 minutes, then mash them with cream and butter.
  2. Pan-fry the salmon in a little oil over medium heat (about 5–8 minutes per side, depending on the thickness of the fillet) and deglaze with lemon juice.
  3. Serve the salmon with the pan juices over the mashed potatoes.
  4. Add salt and pepper to taste.
