0.5 kg Potato Guru thin-skinned potatoes, thinly sliced
2 tbsp olive oil
1 large onion, thinly sliced
3 eggs
Finely chopped parsley
Salt, pepper, paprika

Heat the oil in a skillet over medium heat.
Add the potatoes with salt, pepper, and paprika, and sauté them, turning occasionally, until tender. (About 8 minutes)
Add the onions and cook for another 10 minutes or so, until translucent.
Remove from the heat and let cool for 5 minutes.
Whisk the eggs in a bowl with parsley and a little oil, then add them to the potatoes and onions.
Heat the mixture over medium heat for another 5–10 minutes, until it comes away from the bottom, then place it in a preheated 180°C oven for about another 5 minutes.
