Air-fried Patatas Bravas

- 1 kg Potato Guru thin-skinned potatoes
- 2 tbsp olive oil or other vegetable oil
- 1 clove of garlic
- 1 cup mayonnaise (250 ml)
- 1 tbsp vinegar
- 1 tsp concentrated tomato paste
- 1 tsp salt, cayenne pepper, smoked paprika, and cumin

- Cut the potatoes into wedges, leaving the skin on.
- Toss them with oil, a little salt, and a little paprika in a bowl.
- Place the potatoes in the air fryer at 180 degrees for 20–30 minutes.
- Stir them and leave them for another 5–10 minutes at 200 degrees.
- For the sauce, mix the mayonnaise with the garlic (grated), tomato paste, and spices in a bowl.
- You can use yogurt instead of mayonnaise if you prefer something lighter.
